How is it harvested?
Commonly used in glazes, reductions, and dressings, balsamic vinegar is a staple of Italian dishes. Traditional balsamic vinegar comes from white Trebbiano grapes harvested in Modena, Italy. The grapes then go through a slow fermentation process in wooden casks. Classic balsamic can be aged for over a decade before reaching kitchen tables.
